CHICKPEA RISSOLES (Vegetarian)

 
 
Chickpea Rissoles or Chickpea patties are pure vegetarian's delight. Deliciously nutritious these patties make a great snack at any time,
light lunch or dinner with some side of salad, wrapped  around your favourite bread, sandwiched as in burgers or just served as an entrée.
  


To make Chickpea Rissoles you will need:

2 cups of cooked Chickpeas/Chole/Chana drained.(Tips: Soak chickpeas overnight and cook until done. Drain and set aside)
1 medium onion finely chopped
2 cloves of garlic, minced
1 carrot grated or minced
1 stick of celery finely chopped
1/4 cup of chopped coriander/parsley
juice of half a lemon
1 teaspoon cumin seeds
2-3 green chillies finely chopped
1 cup breadcrumb
3-4 tablespoon of Chickpea flour /Besan
A small bowl of water to wet your hands in order to roll the patties 
Salt and Pepper seasoning
Coriander Leaves to garnish
Cucumber Raita or Tzatziki and lemon wedge or slices to serve

 
METHOD:
 
 
 
Step 1: You may chop/ grate and mince all vegggies individually or pop them all (such as garlic, chillies, onion, celery, herbs, carrots, capsicum etc) in the food processor and give a quick pulse to combine in order to ensure neatly minced veggies..
 
Step 2: Now add the chickpea and pulse again. we do not need a smooth blend of the chickpea.. little chunky mixture.  (step 2 and 3 above).Transfer into a bowl
 
Step 4: Now add the Besan, breadcrumbs, cumin seeds, lemon juice and give the mixture a good massage with your hands.
 
Step 5: Wet your hands every time  to roll the mixture in order to form neatly shapped patties.
 
Step 6: Heat oil in a frying pan/ribbed pan and fry the patties, wait for one side to cook and brown before you flip on the other side.(I would recommend using a normal frying pan as these patties are quite delicate)
 


Best served warm with your choice of sauce. I served mine with Tzatziki. If you do not eat egg or allergic to egg this recipe is just perfect for you as it is egg free. 
 

So healthy and tasty after school snack, perfect for kids lunch boxes, or after play or picnic food... you must give these a go!
